Nikolaos Giannakopoulos is an award-winning executive chef and culinary entrepreneur with over 40 years of experience in the industry. Recognized in Europe by the BGFA in 2007 as "The Best Youngest Chef" and "The Best Youngest Pastry Chef", he has led the creation of innovative restaurant concepts and managed multiple establishments in Montreal.
His love for Spanish cuisine was born during a trip to Andalusia, where he was captivated by the passion and artistry behind dishes like paella and tapas. Inspired by this experience, he incorporated Spanish flavors into his restaurants, perfecting traditional recipes with his personal touch. Currently, he is the Head Chef at Olé Tapas, a restaurant that pays tribute to authentic Spanish cuisine, where he blends modern techniques with Spain’s most emblematic flavors, establishing himself as a leading figure in Hispanic-Mediterranean gastronomy.
